  • 1/2 cup Caesar salad dressing
  • 1/2 tsp ground oregano
  • 2 cups cherry tomatoes, halved
  • 1 1/2 cups diced, cooked chicken
  • 1 cup sliced cucumber
  • 1/2 cup thinly sliced red onion
  • 1/3 cup Kalamata olives, pitted and chopped
  • 1/3 cup crumbled feta cheese
  • lettuce leaves (optional)

  • Prepare rice according to package directions. Allow to cool for 5 minutes.

  • Whisk together salad dressing and oregano in a medium bowl.

  • Add cherry tomatoes, chicken, cucumber, red onion, olives and feta to bowl, and toss to combine.

  • Arrange lettuce leaves on 4 serving plates, if using. Top with salad.
