Step 1
Prepare quinoa according to package directions.
Step 2
Combine quinoa, cauliflower, tomatoes, olives, feta cheese, onion and pine nuts in a large bowl.
Step 3
Whisk together olive oil, lemon juice, zest and oregano in a separate bowl.
Step 4
Pour dressing over quinoa mixture and toss to combine.
