Step 1
Prepare rice according to package directions.
Step 2
Place rice in a medium bowl and fold in rice wine vinegar. Place a wet towel over the bowl of rice to keep it from drying out. Allow to cool to room temperature.
Step 3
In a small bowl, combine mayo and sriracha. Set aside.
Step 4
In a small pan, toast panko over medium heat for 3 minutes until golden brown. Stirring frequently. Remove from heat and set aside.
Step 5
Assemble bowls with a rice base, followed by crab, cucumber, and avocado. Sprinkle panko on top. Drizzle with spicy mayo and eel sauce. Sprinkle furikake and scallions on top.
