Prepare rice according to package directions, adding crushed bouillon cubes to water.
Heat oil in a medium skillet over medium heat. Sauté onion for 2 minutes, then add garlic and cumin, if using. Sauté for 30 more seconds.
Remove from heat and fold in cooked rice, cilantro, lime juice, salt and pepper. Serve with lime wedges, if desired.
