Bring the mixture to a gentle boil over medium heat, then reduce the heat to low. Simmer, stirring frequently, for about 20 minutes, or until the rice is tender and the pudding has thickened to your desired consistency.

Remove the saucepan from heat and stir in the chocolate chips until melted and fully combined.

Allow the rice pudding to cool slightly before serving. It can be enjoyed warm or chilled. Sprinkle with pistachios.
