Ingredients

  • 1 bag Success® Brown Rice
  • 1 tbsp olive oil
  • 4 boneless, skinless chicken breasts
  • salt
  • pepper
  • 24 frozen small pearl onions, thawed
  • 1 large cucumber, diced
  • 1/4 cup chicken broth
  • 3 tbsp chopped fresh basil leaves, divided
  • 1 tbsp chopped parsley
  • 4 lime wedges

Instructions

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Allow chicken to come to room temperature, and season both sides with salt and pepper. 

    Step 3

  • Meanwhile, heat oil in a large skillet over medium-high heat. Brown chicken for 5-6 minutes per side. Add onions, and broth. Simmer on low for 10 minutes, until chicken reaches an internal temperature of 165F, and onions are cooked through. 

    Step 4

  • Stir in 2 tablespoons of basil and parsley. Serve chicken mixture over rice. Garnish with fresh lime wedges, cucumbers, and additional basil.
