Asian Steak and Rice with Mushrooms Recipe

  • 1 tbsp canola oil
  • 1 lb flank steak
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups (12 oz) fresh sliced mushrooms
  • 1/2 cup frozen shelled edamame or green peas, thawed
  • 1/2 cup thinly sliced red bell pepper
  • 3 tbsp apricot preserves
  • 3 tbsp soy sauce
  • 1/2 tsp ground ginger

Instructions

  • When the craving for steak hits but you’re short on time, this Asian-Style Steak with Mushrooms and Rice, made with tender flank steak, juicy mushrooms and fragrant Success® Jasmine Rice, is all you need. Try it tonight!

    Step 1

  • Prepare rice according to package directions. Transfer to a large bowl.

    Step 2

  • Meanwhile, heat oil in a large skillet over medium-high heat.

    Step 3

  • Season steak with salt and pepper and place in skillet. Cook to desired doneness, about 15 minutes for medium, turning once.

    Step 4

  • Remove beef to a cutting board and cover loosely with aluminum foil. Allow meat to rest for 5 minutes, then slice thinly across the grain.

    Step 5

  • Add mushrooms, edamame or peas and bell pepper to skillet over medium heat. Sauté for 5 minutes, until vegetables are just tender.

    Step 6

  • Combine preserves, soy sauce and ginger in a small bowl. Add to skillet, stirring to combine.

    Step 7

  • Serve vegetable mixture over rice, topped with sliced steak.
