Step 1
Prepare rice according to package directions. Transfer to a large bowl.

Meanwhile, heat oil in a large skillet over medium-high heat.
Step 3
Season steak with salt and pepper and place in skillet. Cook to desired doneness, about 15 minutes for medium, turning once.
Step 4
Remove beef to a cutting board and cover loosely with aluminum foil. Allow meat to rest for 5 minutes, then slice thinly across the grain.
Step 5
Add mushrooms, edamame or peas and bell pepper to skillet over medium heat. Sauté for 5 minutes, until vegetables are just tender.
Step 6
Combine preserves, soy sauce and ginger in a small bowl. Add to skillet, stirring to combine.
