Ingredients

  • 1 bag Success® Brown Rice
  • 1 tsp olive oil
  • 1/4 cup frozen corn, thawed
  • 1/4 cup chopped onion
  • 1/2 tsp ground cumin
  • 1 can (8 oz) Mexican-style tomato sauce
  • 1/4 cup fresh cilantro leaves, chopped
  • juice of 1 lime

  • This one-pan Whole Grain Spanish Rice dish is the delicious, quick side dish you’ve been looking for! Made with whole-grain Success® Brown Rice, corn, onions and Mexican-style tomato sauce, and seasoned with cumin, cilantro and lime, it’s bursting with flavor.

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a medium saucepan over medium heat. Add corn, onion and cumin and sauté for 3-5 minutes. Add tomato sauce; reduce heat to low and simmer for 5 minutes. Stir in rice, cilantro and lime juice.
