Whole Grain Spanish Rice

This quick recipe for homemade Spanish Rice is even better than any boxed variety! Use brown rice, vegetables, cumin, tomato sauce and top with cilantro and lime.

Ingredients

  • 1 bag Success® Brown Rice
  • 1 tsp olive oil
  • ¼ cup onion, chopped
  • ¼ cup frozen corn, thawed
  • ½ tsp ground cumin powder
  • 1 can (8 oz.) Mexican-style tomato sauce
  • ¼ cup fresh cilantro leaves, chopped
  • 1 lime wedges, for garnish

Instructions

  • This one-pan Spanish rice dish is the perfect quick side dish you’ve been looking for! Made with whole grain Success® Brown Rice, onions, corn, and Mexican-style tomato sauce, seasoned with cumin, cilantro and lime.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a medium saucepan over medium heat. Add onion, corn, and cumin and sauté 2 minutes. Add tomato sauce, reduce heat to low and simmer 5 minutes. Stir in rice, cilantro, and lime juice.

Tips
