Thai Style Rice and Shrimp Wraps

Ingredients

  • 1 bag Success® Jasmine Rice or Success® White Rice
  • 1 can (15 oz) light coconut milk
  • 1 cup cooked salad shrimp
  • 1 mango, peeled and diced
  • 1 green onion, minced
  • 2 tbsp chopped fresh cilantro leaves
  • 2 tbsp chopped roasted, salted peanuts
  • 1 tbsp seasoned rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp green curry paste
  • 1 tsp soy sauce
  • 4 burrito-size spinach tortillas, warmed
  • 1/2 cup prepared peanut sauce (optional)

Instructions

  • These Thai Style Rice and Shrimp Wraps are easy to make and are sure to be a hit with family and friends. Enjoy them as a quick weeknight dinner, or as an easy, to-go meal!

    Step 1

  • Prepare rice according to package directions, substituting coconut milk for 2 cups of the water.

    Step 2

  • Place cooked rice in a large bowl. Add shrimp, mango, green onions, cilantro, peanuts, rice vinegar, sesame oil, curry paste and soy sauce and stir thoroughly to combine.

    Step 3

  • Divide mixture between warm tortillas. Roll up and serve with prepared peanut sauce, if using.
