Spring Rice Salad with Herbed Buttermilk Dressing

  • 1 bag Success® White Rice
  • 3/4 cup buttermilk
  • 6 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp kosher salt
  • 3 tbsp mint, chopped
  • 1/4 cup chives, chopped
  • 2 cups baby spinach
  • 1 cup snow peas, julienned
  • 1 cup cucumber, thinly sliced
  • 1/2 cup feta cheese


  • This salad is bursting with the fresh flavors of an array of herbs as well as the crumbly and delicious feta cheese.

    Step 1

  • Prepare rice according to package directions. Cool. 

    Step 2

  • In a bowl, whisk together the buttermilk, mayonnaise, lemon juice, kosher salt, mint and chives. 

    Step 3

  • Combine cooled rice with spinach, snow peas, cucumber and feta cheese. 

    Step 4

  • Add dressing and toss to combine.
