This salad is bursting with the fresh flavors of an array of herbs as well as the crumbly and delicious feta cheese.
Step 1
Prepare rice according to package directions. Cool.
Step 2
In a bowl, whisk together the buttermilk, mayonnaise, lemon juice, kosher salt, mint and chives.
Step 3
Combine cooled rice with spinach, snow peas, cucumber and feta cheese.
Step 4
Add dressing and toss to combine.
