Prepare rice according to package directions.
Meanwhile, heat oil in a large skillet over medium heat. Add shrimp and sauté for 1-2 minutes, until they just begin to turn pink.
Add mushrooms and artichoke hearts to skillet and sauté for 2 minutes. Add Alfredo sauce and bring to a boil.
Remove skillet from heat. Serve shrimp mixture over rice. Garnish with Parmesan and parsley, if using.
