  • 1 tbsp olive oil
  • 1 lb fresh shrimp, cleaned and deveined
  • 1 cup thinly sliced mushrooms
  • 1 jar (6 oz) marinated artichoke hearts, drained and quartered
  • 1 jar (16 oz) Alfredo sauce
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley (optional)

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in a large skillet over medium heat. Add shrimp and sauté for 1-2 minutes, until they just begin to turn pink.

  • Add mushrooms and artichoke hearts to skillet and sauté for 2 minutes. Add Alfredo sauce and bring to a boil.
