Shrimp Alfredo with Rice

  • 2 bags Success® White Rice
  • 1 Tbsp olive oil
  • 1 lb fresh shrimp, cleaned and deveined
  • 1 cup fresh mushrooms, thinly sliced
  • 1 jar (6 oz.) marinated artichoke hearts, drained and quartered
  • 1 jar (16 oz.) Alfredo sauce
  • Parmesan cheese, shredded
  • parsley for garnish (optional)

  • Prepare rice according to package directions.

  • Heat oil in a large skillet over medium heat. Add shrimp and sauté until they just begin to turn pink. Add mushrooms and artichokes and sauté 2 minutes. Add Alfredo sauce and bring to a boil. Remove from heat. Serve over rice. Garnish with Parmesan.

Homemade Alfredo Sauce

Sauce from a jar is good, but if ti’s homemade you can control the thickness and creaminess while cooking it – which is a plus, especially if you love the rich flavor of parmesan cheese.

Although there is an infinite list of recipe variations, this classic sticks to a few simple ingredients: butter, heavy cream, garlic, parsley and of course, good quality parmesan cheese. Some might say that adding a pinch of Gruyere cheese will help with texture, as this cheese variety melts better that parmesan.

Making Alfredo Sauce is simpler than you might think! Melt the butter at a medium heat, incorporate heavy cream when it is fully melted and let simmer for a few minutes. Lastly, add cheese and garlic – you must whisk the mixture steadily and quickly. Chopped parsley will add the final touch!
