Step 1
Prepare rice according to package directions.
Step 2
Meanwhile, heat oil in a large, non-stick skillet over medium-high heat. Cook chicken for 6-8 minutes, stirring occasionally, until chicken starts to brown and is no longer pink inside. Add celery, green onions and red pepper to skillet. Cook for 2 minutes, until starting to soften.
Step 3
Add cooked rice and marinade to skillet. Cook for 2 minutes, stirring, until heated through and thoroughly combined.
Step 4
Divide spinach leaves among four bowls. Top with chicken and rice mixture.
