  • Prepare rice according to package directions.

  • While rice is cooking, heat olive oil in large non-stick skillet and cook chicken on medium-high heat for 10 minutes, stirring occasionally. Add celery, green onions, and red pepper. Cook 2 minutes.

  • Add cooked rice and marinade to skillet and stir to combine ingredients.

  • Serve over spinach leaves. Garnish with celery leaves, if desired.
