Sesame Ginger Chicken and Brown Rice

Servings SERVES 4


  • 2 bags Success® Brown Rice, Success® White Rice, or Success® Jasmine Rice
  • 1 tbsp olive oil
  • 1 lb chicken breast, cubed in ½-inch pieces
  • 4 each celery ribs and green onions, sliced ¼-inch thick
  • 1 each red bell pepper, diced
  • ⅓ cup sesame ginger marinade
  • 1 pkg (6 oz.) fresh baby spinach leaves

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • While rice is cooking, heat olive oil in large non-stick skillet and cook chicken on medium-high heat for 10 minutes, stirring occasionally. Add celery, green onions, and red pepper. Cook 2 minutes.

    Step 3

  • Add cooked rice and marinade to skillet and stir to combine ingredients.

    Step 4

  • Serve over spinach leaves. Garnish with celery leaves, if desired.

    Recipe Variations

    This recipe tastes great with Success® White Rice or Jasmine Rice as well, swap in what you have on hand.

One-Pan Dinner

Put an Asian-inspired twist on your chicken dinner tonight with a sesame and ginger marinade. Find your favorite store-bought version marinade or if you’re feeling adventurous try your hand at your own homemade version with sesame oil, soy sauce and ground ginger or chopped fresh ginger.

This one-pan dinner has got it all with whole grain brown rice, protein-packed chicken, and nutrient-filled vegetables like spinach and red pepper. The beauty is that it’s all ready in 30 minutes or less. While your Success® Rice boils, cook your chicken in the skillet and add in the veggies before it is fully cooked to help flavors blend and cut down on cook time.

Have all of your ingredients ready before starting so that all you need to do is stir and add with ease.


If you’re all about grilling season, cover your chicken and chopped red pepper in the marinade before cooking for a few hours and when ready, cook your chicken on the grill and use a kebab stick to roast your red pepper. Serve everything over a bed of spinach and brown rice with a small spoonful of the marinade on top.

With a complete meal, you won’t need to add any pairings but you may want to finish it off with a bowl of homemade Frozen Coconut Rice Pudding Ice Cream or some No Bake Quinoa Peanut Butter Cookies.
