  • 1 bag Success® Brown Rice
  • 1 tbsp olive oil
  • 1 lb chicken breast, cut into 1/2-inch pieces
  • 4 celery ribs, thinly sliced
  • 4 green onions, thinly sliced
  • 1 red bell pepper, diced
  • 1/3 cup sesame ginger marinade
  • 1 pkg (6 oz) fresh baby spinach


One-Pan Dinner

Put an Asian-inspired twist on your chicken dinner tonight with a sesame and ginger marinade. Use your favorite store-bought marinade for this dish or, if you’re feeling adventurous, try your hand at making your own homemade version with sesame oil, soy sauce and ground ginger or chopped, fresh ginger.

With whole-grain brown rice, protein-packed chicken and nutrient-filled vegetables like spinach and red pepper, this one-pan dinner has got it all! Not only that, it’s also ready in less than 30 minutes. While your Success® Rice boils, cook the chicken in the skillet. Then, add in the veggies before the chicken is fully cooked to help the flavors blend and to cut down on cook time.

Cook with ease by having all of your ingredients ready before you start. Then, all you need to do is stir and add ingredients when the time comes. 

Switch it Up!

If it’s warm out and you love to grill, make this dish on the barbecue. Simply coat the chicken and chopped red pepper in the marinade a few hours before cooking and, when ready, grill the chicken over medium heat. Use a kebab stick to roast the red pepper. Serve everything over a bed of spinach and brown rice with a small spoonful of fresh marinade on top.

With this complete meal, you won’t need to add any sides. Still, you may want to finish it off with a bowl of homemade Frozen Coconut Rice Pudding Ice Cream or some No Bake Peanut Butter Quinoa Cookies.

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in a large, non-stick skillet over medium-high heat. Cook chicken for 6-8 minutes, stirring occasionally, until chicken starts to brown and is no longer pink inside. Add celery, green onions and red pepper to skillet. Cook for 2 minutes, until starting to soften.

    Step 3

  • Add cooked rice and marinade to skillet. Cook for 2 minutes, stirring, until heated through and thoroughly combined.

    Step 4

  • Divide spinach leaves among four bowls. Top with chicken and rice mixture.
