A refreshing mix of Mediterranean ingredients paired with Success® Tri-Color Quinoa makes for a nutrient-dense Quinoa Tabouli salad packed with vegetables and protein. For extra flavor, don’t forget the feta cheese!
Prepare quinoa according to package directions. Allow to cool.
Whisk together olive oil, lemon juice, Dijon, lemon zest and shallot in a medium bowl. Fold in cooked quinoa, tomatoes, cucumber, parsley, green onions and mint. Season with salt and pepper. Top with cheese, if using.
To give your quinoa more flavor, add 1 tablespoon of chicken or vegetable bouillon granules to the cooking water.
Switch up this salad by adding in chopped lettuce of choice, Kalamata or green olives or chickpeas.
