Prepare quinoa according to package directions. Cool.
In a medium bowl whisk together olive oil, zest, lemon juice, shallot, and mustard. Fold in cooked quinoa, parsley, cucumber, tomatoes, onions, and mint. Season with salt and pepper. Top with cheese, if desired.
Add 1 tablespoon vegetable bouillon granules to the cooking water.
