Quinoa Tabouli

This Tabouli Salad recipe is a refreshing mix of fresh vegetables with chopped herbs like parsley and mint all tossed in a lemon and oil dressing.

  • 2 bags Success® Tri-Color Quinoa
  • 3 tbsp olive oil
  • 1 tbsp finely grated lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tbsp shallot, minced
  • 1 tbsp Dijon mustard
  • ½ cup parsley, chopped
  • ½ cup cucumber, seeded and chopped
  • 1 cup cherry tomatoes, halved
  • 2 green onions, sliced
  • 1 tbsp fresh mint leaves, chopped
  • salt, to taste
  • ground black pepper, to taste
  • ¼ cup crumbled feta cheese (optional)

    Step 1

  • Prepare quinoa according to package directions. Cool.

  • In a medium bowl whisk together olive oil, zest, lemon juice, shallot, and mustard. Fold in cooked quinoa, parsley, cucumber, tomatoes, onions, and mint. Season with salt and pepper. Top with cheese, if desired.

    Recipe Tips

    Add 1 tablespoon vegetable bouillon granules to the cooking water.

  • A few add-ins to this salad include chopped lettuce of choice, Greek Feta cheese, Kalamata olives or Spanish green olives.

Tabouli Pairing

Tabouli salad or tabbouleh, is a simple Mediterranean inspired salad made with fresh vegetables like cucumber, tomatoes and onions, chopped herbs like parsley and mint all tossed in a lemon and oil dressing.

Although this dish is naturally vegetarian, to make it vegan you can leave out the Feta cheese and check to make sure that your mustard is vegan or simply omit the mustard altogether.
