Ingredients

  • 2 bags Success® Tri-Color Quinoa
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp shallot, minced
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup cucumber, chopped
  • 1/4 cup parsley, chopped
  • 1 tbsp fresh mint leaves, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup feta cheese, crumbled

Instructions

  • Loaded with herbs, fresh produce, quinoa and feta, then dressed in a punchy lemon vinaigrette, this summery side pairs well with any grilled protein. 

    Step 1

    Prepare quinoa according to package directions. Allow it to cool.

    Step 2

    Whisk together olive oil, lemon juice, and shallot in a medium bowl. Fold in cooked quinoa, tomatoes, cucumber, parsley, and mint. Season with salt and pepper. Top with feta.
