Ingredients

  • 2 bags Success® Tri-Color Quinoa
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp finely grated lemon zest
  • 1 tbsp shallot, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, seeded and chopped
  • 1/2 cup chopped parsley
  • 2 green onions, sliced
  • 1 tbsp fresh mint leaves, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese (optional)

    Step 1

  • Prepare quinoa according to package directions. Allow to cool.

    Step 2

  • Whisk together olive oil, lemon juice, Dijon, lemon zest and shallot in a medium bowl. Fold in cooked quinoa, tomatoes, cucumber, parsley, green onions and mint. Season with salt and pepper. Top with cheese, if using.

    Recipe Tips

    To give your quinoa more flavor, add 1 tablespoon of chicken or vegetable bouillon granules to the cooking water.

  • Switch up this salad by adding in chopped lettuce of choice, Kalamata or green olives or chickpeas.
