Preheat oven to 400ºF. Coat a 2-quart baking dish with non-stick cooking spray.
Prepare quinoa according to package directions, add green beans during the last 5 minutes of cooking. Drain and set aside.
Meanwhile, heat oil in a large skillet set over medium-high heat; cook mushrooms, onion, salt, and pepper for 5 to 8 minutes or until golden brown and tender.
Stir together quinoa, green beans, mushroom mixture, soup, and Dijon mustard. Spoon into greased 2 qt baking dish; smooth top. Sprinkle with Parmesan cheese.
Bake for 25 to 30 minutes or until golden brown and bubbling. Let stand for 5 minutes. Sprinkle with chives.
Substitute butter for olive oil if desired.
Substitute crispy fried onions for chives if desired.
