Ingredients

  • Non-stick cooking spray
  • 1 bag Success® Quinoa
  • 12 oz green beans, chopped
  • 2 tbsp olive oil
  • 1 lb mushrooms, sliced
  • 1 onion, sliced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • ½ cup Parmesan cheese, grated
  • 2 tbsp fresh chives, finely chopped

Instructions

  • Get those holiday feels any time of the year with this simple and delicious spin on the classic green bean casserole made with Success® Quinoa.

    Step 1

  • Preheat oven to 400ºF. Coat a 2-quart baking dish with non-stick cooking spray.

    Step 2

  • Prepare quinoa according to package directions, add green beans during the last 5 minutes of cooking. Drain and set aside.

    Step 3

  • Meanwhile, heat oil in a large skillet set over medium-high heat; cook mushrooms, onion, salt, and pepper for 5 to 8 minutes or until golden brown and tender.

    Step 4

  • Stir together quinoa, green beans, mushroom mixture, soup, and Dijon mustard. Spoon into greased 2 qt baking dish; smooth top. Sprinkle with Parmesan cheese.

    Step 5

  • Bake for 25 to 30 minutes or until golden brown and bubbling. Let stand for 5 minutes. Sprinkle with chives.
