Get that holiday feel any time of the year with this simple and delicious spin on the classic green bean casserole made with Success® Tri-Color Quinoa.
Step 1
Preheat oven to 400ºF. Coat a 2-quart baking dish with nonstick cooking spray and set aside.
Step 2
Prepare quinoa according to package directions. Add green beans to water during the last 5 minutes of cooking. Drain and set aside.
Step 3
Meanwhile, heat oil in a large skillet set over medium-high heat. Sauté mushrooms, onions, salt and pepper for 5 to 8 minutes, or until golden brown and tender.
Step 4
Add quinoa, green beans, soup and Dijon mustard to skillet. Stir to combine. Spoon into baking dish and smooth top. Sprinkle with Parmesan cheese.
Step 5
Bake for 25 to 30 minutes, or until golden brown and bubbling. Let stand for 5 minutes. Sprinkle with chives.
Substitute butter for olive oil, if desired.
Substitute crispy fried onions for chives, if desired.
