Ingredients

  • 2 cups chopped green beans
  • 2 tbsp olive oil
  • 1 lb mushrooms, sliced
  • 1 onion, sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 tbsp Dijon mustard
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh chives, finely chopped

Instructions

  • Get that holiday feel any time of the year with this simple and delicious spin on the classic green bean casserole made with Success® Tri-Color Quinoa.

    Step 1

  • Preheat oven to 400ºF. Coat a 2-quart baking dish with nonstick cooking spray and set aside.

    Step 2

  • Prepare quinoa according to package directions. Add green beans to water during the last 5 minutes of cooking. Drain and set aside.

    Step 3

  • Meanwhile, heat oil in a large skillet set over medium-high heat. Sauté mushrooms, onions, salt and pepper for 5 to 8 minutes, or until golden brown and tender.

    Step 4

  • Add quinoa, green beans, soup and Dijon mustard to skillet. Stir to combine. Spoon into baking dish and smooth top. Sprinkle with Parmesan cheese.

    Step 5

  • Bake for 25 to 30 minutes, or until golden brown and bubbling. Let stand for 5 minutes. Sprinkle with chives.
