Ingredients

  • 1 bag Success® Brown Rice
  • 2 cups half and half
  • 1 can (14oz) peaches in juice, drained and liquid reserved
  • 1 tsp ground ginger
  • 1/2 tsp vanilla extract
  • 1/4 cup Greek yogurt

Instructions

Fruity, sweet, and delicious, this peach rice pudding with simple Success® Brown Rice makes any dinner feel special. Throw it together in just 15 minutes and impress everyone at the table!

  • Step 1: Prepare rice according to package directions.

  •  Step 2: While rice is cooking, mix half and half, reserved liquid from the peaches, ginger, and vanilla extract in a saucepan. Bring to a boil over medium heat. Remove from heat.

  •  Step 3: Stir in the reserved peach juice with rice and add the yogurt.

  •  Step 4: Chop peaches and add to rice mixture. 

Recipe Tips

Add a peach drizzle on top by combining 2 tablespoons of peach jam, 1 teaspoon of lemon juice, and 1/2 tablespoon of water. Garnish with peaches, fresh ginger, and mint, if desired.
