Who doesn’t love a good chicken and rice dinner? Try this classic in half the time, thanks to our quick-cooking rice (ready to eat in just 10 minutes!). Put the apron on and enjoy this Lemon Pepper Chicken and Rice dish.
Prepare rice according to package directions.
Heat oil a large skillet over medium heat.
Season chicken with salt and pepper. Brown chicken 3 minutes on each side. Set aside.
Add mushrooms, broth, and lemon juice to skillet. Sauté 4 minutes.
Return chicken to skillet. Cover and simmer on low 5 minutes, or until chicken is cooked.
Stir in rice.
Serve garnished with lemon zest and green onions.
For a short-cut, substitute chicken breasts for chopped rotisserie chicken and add to the skillet with mushrooms. This will allow you to omit 5 minutes of simmer time.
