Step 1
Prepare rice according to package directions.
Step 2
Meanwhile, heat oil in a large skillet over medium heat. Season chicken with salt and pepper. Add to skillet and brown for 3 minutes on each side. Set aside.
Step 3
Add mushrooms, broth and lemon juice to skillet. Cook for 4 minutes, until mushrooms begin to soften.
Step 4
Return chicken to skillet. Cover and simmer on low for 5 minutes, or until chicken is cooked through.
Step 5
Stir in rice. Serve garnished with green onions and lemon zest.
Recipe Tips
For a short-cut, substitute the chicken breasts in the recipe for chopped rotisserie chicken and add to the skillet with the mushrooms. This will allow you to omit 5 minutes of simmer time.
