Preheat a grill over medium heat. Lightly oil the grates to prevent sticking. Prepare rice according to package directions.
In a large bowl, combine the lamb, onion, garlic, parsley, mint, cumin, coriander, paprika, salt, and pepper. Mix well until all the ingredients are fully combined.
Divide the lamb mixture into equal portions and shape them onto skewers, pressing firmly to form kebabs. If using wooden skewers, make sure to leave space at the bottom to make handling easier.
