Ingredients

  • 1 bag Success® Basmati Rice
  • 1 pound ground lamb
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Skewers (if using wooden skewers, soak them in water for 30 minutes before using)

Instructions

  • For a quick and easy lunch or dinner that’s sure to be a crowd-pleaser, this recipe for Lamb Kebabs with Success® Basmati Rice ticks all the boxes.

    Step 1

  • Preheat a grill over medium heat. Lightly oil the grates to prevent sticking. Prepare rice according to package directions. 

    Step 2

  • In a large bowl, combine the lamb, onion, garlic, parsley, mint, cumin, coriander, paprika, salt, and pepper. Mix well until all the ingredients are fully combined. 

    Step 3

  • Divide the lamb mixture into equal portions and shape them onto skewers, pressing firmly to form kebabs. If using wooden skewers, make sure to leave space at the bottom to make handling easier. 

    Step 4

  • Place the lamb kebabs onto the grill and cook for about 5 minutes per side, or until browned and cooked through. Turn occasionally to ensure even cooking. 

    Step 5

  • Serve lamb kebabs over a bed of rice. 

    Recipe Tip 

    Ground beef or ground chicken could be used as an alternate to lamb.  

    Tzatziki sauce can used as a dip or drizzled on top.
