  • Prepare rice according to package directions.

  • Slice lime in half. Zest one half of the lime and reserve the zest.

  • Place cooked rice into a large mixing bowl and add curry powder, olive oil, salt, pepper, lime zest, and juice from half the lime and stir to combine. Refrigerate until chilled, about 2 hours.

  • Remove rice mixture from the refrigerator and stir in chicken, grapes, mint, and almonds. Season to taste.

  • Slice avocados in half the long way and remove the pits. Drizzle each avocado half with a little juice from the remaining half of lime and salt. Spoon the rice mixture into each avocado half and garnish with a sprig of mint and a drizzle of olive oil.
