Curried Brown Rice Stuffed Avocado

  • 1 bag Success® Brown Rice
  • 1 each lime
  • 1 Tbsp curry powder
  • 2 Tbsps extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 cup rotisserie chicken, cubed
  • ½ cup seedless grapes, halved
  • ¼ cup chopped fresh mint leaves
  • ¼ cup toasted slivered almonds
  • 3 large avocados

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Slice lime in half. Zest one half of the lime and reserve the zest.

    Step 3

  • Place the cooked rice into a large mixing bowl and add curry powder, olive oil, salt, pepper, lime zest, and juice from half the lime and stir to combine. Refrigerate until chilled, about 2 hours.

    Step 4

  • Remove rice mixture from the refrigerator and stir in chicken, grapes, mint, and almonds. Season to taste.

    Step 5

  • Slice avocados in half the long way and remove the pits. Drizzle each avocado half with a little juice from the remaining half of lime and salt. Spoon the rice mixture into each avocado half and garnish with a sprig of mint and a drizzle of olive oil.
