This recipe for savory Curried Brown Rice Stuffed Avocado is made with chicken, halved grapes, fresh mint leaves, lime and toasted almonds.

Prepare rice according to package directions.
Zest and juice lime and reserve.
Place the cooked rice into a large mixing bowl and add olive oil, curry powder, 1/2 teaspoon salt, pepper, lime zest, and half of lime juice and stir to combine. Refrigerate until chilled, about 1 hour.
Remove rice mixture from the refrigerator and stir in chicken, grapes, almonds and mint.
Slice avocados in half vertically and remove the pits. Drizzle each avocado half with remaining lime juice and season with remaining salt. Spoon the rice mixture into each avocado half. Garnish with a sprig of mint and a drizzle of olive oil, if desired.
