Step 1
Preheat oven to 400˚F. Prepare rice according to package directions. Allow to cool completely.

Meanwhile, stir together cream cheese, garlic, chili powder, salt and pepper until smooth. Stir in rice, 3/4 cup Cheddar and olive oil.

Pack each jalapeño-half with mixture and arrange on a parchment paper-lined baking sheet. Sprinkle with remaining Cheddar.
Step 4
Bake for 10 to 15 minutes, or until golden, cheese is melted, and jalapeños are tender. Sprinkle with cilantro. Serve with lime wedges.

Enjoy hot with ranch or sour cream.
