Ingredients

  • 1 bag Success® Basmati rice
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded Cheddar cheese, divided
  • 2 tbsp olive oil
  • 8 jalapeño peppers, halved lengthwise and seeded
  • 2 tbsp finely chopped fresh cilantro
  • lime wedges

Instructions

  • Step 1 

    Preheat oven to 400˚F. Prepare rice according to package directions. Allow to cool completely. 

    Step 2  

    Meanwhile, stir together cream cheese, garlic, chili powder, salt and pepper until smooth. Stir in rice, 3/4 cup Cheddar and olive oil. 

    Step 3 

    Pack each jalapeño-half with mixture and arrange on a parchment paper-lined baking sheet. Sprinkle with remaining Cheddar. 

    Step 4 

    Bake for 10 to 15 minutes, or until golden, cheese is melted, and jalapeños are tender. Sprinkle with cilantro. Serve with lime wedges. 

    Step 5 

    Enjoy hot with ranch or sour cream.

Avocado Ranch Dip 1 ripe avocado 1/2 cup sour cream 1/4 cup mayonnaise 2 tbsp milk (adjust for desired thickness) 2 tbsp ranch seasoning powder (store-bought packet) 1 tbsp lemon Step 1 : Mash the avocado in a bowl (or blend in a food processor for smoother texture). Step 2: Stir in sour cream, mayo, milk, ranch powder, and lemon juice. Step 3: Mix until creamy and smooth.
