Italian Penicillin Soup (Italian Pastina Soup or Sick Day Soup)

Ingredients

  • 2 bags Success® Pearl Couscous
  • 4 cups low-sodium chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 2 cloves garlic, minced
  • 1 cup rotisserie chicken, shredded
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 lemon wedges
  • Parmesan, shredded (for garnish)
  • fresh parsley, chopped (for garnish)

Ingredients

  • 2 bags Success® Pearl Couscous
  • 4 cups low-sodium chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 2 cloves garlic, minced
  • 1 cup rotisserie chicken, shredded
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 lemon wedges
  • Parmesan, shredded (for garnish)
  • fresh parsley, chopped (for garnish)

Instructions

  • Step 1 

    Prepare pearl couscous according to package directions. 

    Step 2 

    In a large pot, add the broth and bring to a boil. Add the carrots, celery, and garlic. Reduce heat to medium-low and cook for 5 minutes until vegetables are slightly tender. 

    Step 3 

    Add the chicken and Italian seasoning to the pot and simmer for 5 minutes. Add pearl couscous and continue to cook for 5 additional minutes. Season with salt and pepper. 

    Step 4 

    Ladle into bowls and squeeze the fresh lemon wedge into each bowl. Top with parmesan and parsley.
