Delicious and hearty, these vegetarian rice and bean sliders made with sweet golden beets are perfect for any occasion — from a game night to an outdoor barbecue!
Prepare rice according to package directions. Allow to cool completely.
Pulse together beans, egg and water in a food processor until mashed.
Transfer bean mixture to a large bowl. Add rice, beets, half of the goat cheese, dill, salt and pepper, and stir until combined. Divide mixture into 6 portions and shape into 1/2-inch-thick patties.
Heat half of the oil in a large, nonstick skillet set over medium heat. Cook patties in 2 batches, for 3 to 5 minutes per side or until golden brown and heated through, adding remaining oil as necessary.
Place 2 lettuce leaves together, overlapping ends to form a pocket. Place patty inside lettuce pocket; top with arugula and remaining goat cheese. Drizzle with Sriracha. Repeat with remaining burgers.
For an extra pop of flavor, top sliders with pickled shallots.
If preferred, serve burgers in slider buns.
