  • 1 bag Success® Jasmine Rice
  • 1/2 can (15 oz) white beans, drained and rinsed
  • 1 egg, beaten
  • 1/2 tbsp water
  • 4 oz golden beets, cooked and grated (about 1 1/2 cups)
  • 3 oz goat cheese, crumbled and divided
  • 1 tbsp finely chopped fresh dill
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 12 leaves Bibb lettuce
  • 1 cups arugula
  • 2 tbsp sriracha hot sauce

  • These delicious and meaty vegetarian rice and bean burger sliders are made with a sweet touch of golden beets and perfect for any occasion, from a game night to an outdoor barbecue!

    Step 1

  • Prepare jasmine rice according to package directions. Let cool completely. Preheat oven to 400°F.

    Step 2

  • In a food processor, pulse together beans, egg and water until mashed.

    Step 3

  • Transfer bean mixture to large bowl. Mix in rice, grated beets, half of the goat cheese, dill, salt and pepper until combined. Divide into 6 portions and shape into 1/2-inch thick patties.

    Step 4

  • Heat half of the oil in a large nonstick skillet set over medium heat; cook patties in 2 batches, for 3 to 5 minutes per side or until golden brown and heated through, adding remaining oil as necessary.

    Step 5

  • Place 2 lettuce leaves together, overlapping ends to form a pocket. Place burger inside lettuce pocket; top with arugula and remaining goat cheese. Drizzle with hot sauce. Skewer with a cocktail skewer. Repeat with remaining burgers.

    Recipe Tips

For an extra pop of flavor, top sliders with pickled shallots.

Alternatively, serve burgers in slider buns if preferred.

How to Cook Beets in the Microwave

To cook beets in the microwave: pierce each beet several times with a sharp paring knife. Place beets on a sheet of parchment paper; fold and crimp edges to seal the package. Place on microwave-safe dish.

Microwave on HIGH for 8 to 10 minutes or until fork-tender. Carefully remove beets from the microwave (they will be very hot). Let cool slightly before unwrapping. Gently rub off skins with a paper towel or peel using a paring knife.

Packed with Flavor

These burger patties are incredibly flavorful and hearty packed with vegetables, rice and beans! The component breakdown includes:

-Rice: Success® Jasmine Rice for a fluffy texture and aromatic flavor. As this recipe calls for cooked and chilled rice, it’s perfect for using leftover rice!
-Beans: Pantry staple canned white beans are ideal for this recipe.
-Egg: To make these sliders compact.
-Golden beets, goat cheese, dill, salt and pepper: Flavor enhancing veggies, herbs and cheese.

How to Serve

If you’re wondering how to serve these sliders, our wheat-free suggestion is to use lettuce wraps! However, you can also use classic slider buns if desired. Serve alongside a refreshing rice salad like a Greek Beet and Watermelon Rice Salad or a Beet “Carpaccio” topped with quinoa.
