These delicious and meaty vegetarian rice and bean burger sliders are made with a sweet touch of golden beets and perfect for any occasion, from a game night to an outdoor barbecue!
Prepare jasmine rice according to package directions. Let cool completely. Preheat oven to 400°F.
In a food processor, pulse together beans, egg and water until mashed.
Transfer bean mixture to large bowl. Mix in rice, grated beets, half of the goat cheese, dill, salt and pepper until combined. Divide into 6 portions and shape into 1/2-inch thick patties.
Heat half of the oil in a large nonstick skillet set over medium heat; cook patties in 2 batches, for 3 to 5 minutes per side or until golden brown and heated through, adding remaining oil as necessary.
Place 2 lettuce leaves together, overlapping ends to form a pocket. Place burger inside lettuce pocket; top with arugula and remaining goat cheese. Drizzle with hot sauce. Skewer with a cocktail skewer. Repeat with remaining burgers.
For an extra pop of flavor, top sliders with pickled shallots.
Alternatively, serve burgers in slider buns if preferred.
