Substitute capers for olives, if preferred.

To diminish the “raw” flavor of onions, soak them in ice water for at least 5 minutes before using them in your recipe.

Feel free to use roasted, boiled, steamed or grilled beets in this recipe.

Watermelon … Salad!

Fruit salad is nothing new. Not when you’re talking about using fruits such as oranges, cherries or grapes, like in our Roasted Grape and Feta Salad. Still, you might be unsure about how to add watermelon to a savory dish. Although it may sound unusual, the pairing of sweet watermelon, tangy feta cheese, refreshing mint, crunchy, earthy beets, nuts, and chilled, fluffy rice is a winning combination!

The use of jasmine rice in this dish also offers a hint of floral, sweet flavor and will keep you feeling full. Make this recipe for a tasty side dish on a hot summer night or bring it to an outdoor barbecue to share!

To serve a crowd, double the ingredient amounts because this dish is sure to be gone in a flash!
