This impressive and fresh Summer salad is a great addition to your meal spread or outdoor barbecue. Toss with aromatic and fluffy Success® Jasmine Rice for a hearty and filling touch.
Prepare jasmine rice according to package directions. Let cool completely.
In serving bowl, combine oil, lemon juice, salt and pepper, and toss with rice. Add beets, watermelon, olives, red onion, feta and mint; toss gently. Let stand for 5 minutes. Sprinkle walnuts over top.
Substitute capers for olives if preferred.
To cut the “raw” flavor of onions, soak in ice water for at least five minutes.
Use roasted, boiled, steamed or grilled beets.
