Greek Beet and Watermelon Rice Salad

  • 1 bag Success® Jasmine Rice
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup golden beets, cooked and diced
  • 1 cup watermelon, diced
  • 1/4 cup pitted black olives, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp fresh mint, thinly sliced
  • 2 tbsp walnuts, toasted and chopped

    Step 1

  • Prepare jasmine rice according to package directions. Let cool completely.

    Step 2

  • In serving bowl, combine oil, lemon juice, salt and pepper, and toss with rice. Add beets, watermelon, olives, red onion, feta and mint; toss gently. Let stand for 5 minutes. Sprinkle walnuts over top.

    Recipe Tips

    Substitute capers for olives if preferred.

    To cut the “raw” flavor of onions, soak in ice water for at least five minutes.

    Use roasted, boiled, steamed or grilled beets.
