Ingredients

  • 1 bag Success® Jasmine Rice
  • 1/2 can (7.5 oz) white beans, drained and rinsed
  • 1 egg, beaten
  • 1/2 tbsp water
  • 4 oz (about 1 1/2 cups) golden beets, cooked and grated
  • 3 oz goat cheese, crumbled and divided
  • 1 tbsp finely chopped fresh dill
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil, divided
  • 12 leaves Bibb lettuce
  • 1 cup arugula
  • 2 tbsp Sriracha sauce

Instructions

  • Delicious and hearty, these vegetarian rice and bean sliders made with sweet golden beets are perfect for any occasion — from a game night to an outdoor barbecue!

    Step 1

  • Prepare rice according to package directions. Allow to cool completely.

    Step 2

  • Pulse together beans, egg and water in a food processor until mashed.

    Step 3

  • Transfer bean mixture to a large bowl. Add rice, beets, half of the goat cheese, dill, salt and pepper, and stir until combined. Divide mixture into 6 portions and shape into 1/2-inch-thick patties.

    Step 4

  • Heat half of the oil in a large, nonstick skillet set over medium heat. Cook patties in 2 batches, for 3 to 5 minutes per side or until golden brown and heated through, adding remaining oil as necessary.

    Step 5

  • Place 2 lettuce leaves together, overlapping ends to form a pocket. Place patty inside lettuce pocket; top with arugula and remaining goat cheese. Drizzle with Sriracha. Repeat with remaining burgers.

    Recipe Tips

    For an extra pop of flavor, top sliders with pickled shallots.

    If preferred, serve burgers in slider buns.

How to Cook Beets in the Microwave

To cook beets in the microwave, begin by piercing each beet several times with a sharp paring knife. Place beets on a sheet of parchment paper, then fold and crimp the edges of the paper to seal the package. Place on a microwave-safe dish.

Microwave beets on HIGH for 8 to 10 minutes or until fork-tender. Carefully remove beets from the microwave (they will be very hot). Allow the beets to cool slightly before unwrapping. Gently rub off the skins with a paper towel or peel beets using a paring knife.
