With basmati or jasmine rice, gently sautéed onions, freshly grated ginger root and carrots, this is a perfect side that goes with almost any dish. This Ginger and Carrot Rice can be paired with anything from Asian-style marinated salmon to roasted chicken.
Prepare rice according to package directions.
Heat butter in a medium skillet over medium heat. Add onions and sauté until the onions have softened and turned golden, about 10 minutes.
Stir in carrots, ginger and salt. Cover and let steam for 5 minutes. Stir in cooked rice. Garnish with fresh cilantro, if using.
