Ingredients

  • 2 bags Success® White Rice (best if day old)
  • 3 tbsp store-bought garlic chili oil, divided
  • 4 cloves garlic, minced
  • 1 cup scallions, chopped with white and green parts separated
  • 2 eggs, lightly beaten
  • 1 cup mixed vegetables
  • 2 tbsp soy sauce
  • 1 tsp sesame oil (optional)

Instructions

  • An ideal way to give leftover rice new life, this generously seasoned dish is anything but boring. Tread carefully when choosing your preferred chili oil — some pack a serious amount of heat!

    Step 1

    Prepare rice according to package directions.

    Step 2

    Heat a large skillet over medium-high heat. Add 2 tbsp garlic chili oil. Add garlic and the white parts of the scallions. Stir-fry for 30 seconds until fragrant.

    Step 3

    Push garlic and scallions to the side. Add eggs, scrambling until just set. Stir in mixed vegetables and cook for 2 minutes. Add rice, breaking up clumps. Stir-fry for 4 minutes, letting it crisp slightly.

    Step 4

    Pour in soy sauce and an extra 1 tbsp garlic chili oil. Toss well to coat. Drizzle with sesame oil, if using, and stir in green parts of scallions. Serve hot.
