Firecracker Chicken Meatballs & Coconut Pineapple Rice

Ingredients

  • 1 bag Success® Jasmine rice
  • 2 cups coconut milk
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup pineapple chunks
  • 1/4 cup cilantro, chopped
  • 1 tbsp lime juice
  • 2 tbsp shredded coconut

Instructions

  • Step 1: Preheat the oven to 400°F and line a baking sheet with parchment paper.

  • Step 2: Prepare rice according to package directions. Replace half of the water with coconut milk.

  • Step 3: In a large bowl, combine the ground chicken, breadcrumbs, green onions, garlic, soy sauce, sriracha sauce, honey, sesame oil, salt, and black pepper. Mix well until all the ingredients are fully incorporated.

  • Step 4: Shape the chicken mixture into meatballs, about 1 inch in diameter, and place them on the baking sheet. Bake for 20 minutes or until cooked through and golden brown.

  • Step 5: In a large bowl, combine the rice, pineapple chunks, cilantro, lime juice and coconut.

  • Step 6: Serve meatballs over rice and enjoy.
