Step 1: Preheat the oven to 400°F and line a baking sheet with parchment paper.
Step 2: Prepare rice according to package directions. Replace half of the water with coconut milk.

Step 4: Shape the chicken mixture into meatballs, about 1 inch in diameter, and place them on the baking sheet. Bake for 20 minutes or until cooked through and golden brown.
Step 5: In a large bowl, combine the rice, pineapple chunks, cilantro, lime juice and coconut.
Step 6: Serve meatballs over rice and enjoy.
