Arugula

Prepare your salads to their full potential by finding the perfect lettuce or mixing and matching your greens. This bright salad calls for arugula: peppery and slightly tart. It pairs nicely with a sweeter vinaigrette. Alternatively, you could apply a simple oil and vinegar dressing with just a hint of honey. Just remember that arugula, as most leafy greens, wilts fairly quickly, so don’t toss it in your rice bowl until it’s time to eat.

If you prefer, substitute arugula with a microgreen blend, romaine lettuce, spinach, kale or other leafy greens.
