Ingredients

  • 1 bag Success® Basmati Rice
  • 1 tbsp canola oil
  • 1 lb boneless, skinless chicken breast, cut into 1-inch chunks
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tomatoes, chopped
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp curry powder
  • 1/4 cup fresh cilantro leaves, optional

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in a large skillet set over medium-high heat. Season chicken with salt and black pepper.

  • Add chicken to skillet and sauté until starting to brown, 3-5 minutes.

  • Add tomatoes, onions, garlic and curry powder to skillet. Simmer for 10 minutes, covered.

    Step 5

  • Serve curry over hot rice. Garnish with cilantro, if desired.
