  • 1 lb boneless skinless chicken breast, diced
  • salt and ground black pepper, to taste
  • 1 onion, sliced
  • 2 each garlic, minced
  • 2 tbsp curry powder
  • 3 tomatoes, chopped
  • fresh cilantro sprigs, optional

Instructions

  • Prepare rice according to package directions.

    Step 2

  • While rice is cooking, heat oil in skillet.

    Step 3

  • Season chicken with salt and ground black pepper, to taste.

  • Brown chicken.

  • Add remaining ingredients.

  • Simmer for 10 minutes, covered.

  • Serve over hot cooked rice.
