  • 4 tilapia fillets
  • 1 Tbsp ground ginger
  • 2 tsps garlic powder
  • 1 tsp ground cumin powder
  • 1 Tbsp curry powder
  • ⅓ cup apple cider vinegar
  • 1 tsp salt
  • ½ tsp ground black pepper
  • chopped fresh cilantro leaves, for garnish, if desired

    Step 1

  • Preheat oven to 375°F. Prepare rice according to package directions.

  • Coat a large baking dish with non-stick cooking spray. Pat fillets dry with paper towels and arrange in dish. In a small bowl, combine ginger, garlic, cumin, curry, vinegar, salt, and pepper.

  • Brush fish with curry mixture and refrigerate 20 minutes. Remove from refrigerator and bake 10 minutes, or until fish flakes easily with a fork.
