  • Preheat oven to 375°F. Prepare rice according to package directions.

  • Coat a large baking dish with non-stick cooking spray. Pat fillets dry with paper towels and arrange in dish. In a small bowl, combine ginger, garlic, cumin, curry, vinegar, salt, and pepper. Brush fish with curry mixture and refrigerate 20 minutes. Remove from refrigerator and bake 10 minutes, or until fish flakes easily with a fork.

  • Serve with rice. Garnish with cilantro.
