Ingredients

  • 2 bags Success® Basmati Rice
  • nonstick cooking spray
  • 4 tilapia fillets
  • 1/3 cup apple cider vinegar
  • 1 tbsp curry powder
  • 1 tbsp ground ginger
  • 2 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • fresh cilantro leaves, for garnish

Instructions

    Step 1

  • Preheat oven to 375°F. Prepare rice according to package directions.

    Step 2

  • Coat a large baking dish with nonstick cooking spray. Pat fish fillets dry with paper towels and arrange in dish. In a small bowl, combine vinegar, curry powder, ginger, garlic powder, cumin, salt and pepper.

    Step 3

  • Brush fish with curry mixture and refrigerate for 20 minutes. Remove from refrigerator and bake for 10 minutes, or until the fish flakes easily with a fork.

  • Serve fish over rice, garnished with cilantro.
