Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • nonstick cooking spray
  • 2 cups chopped kale
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 cup feta cheese
  • 1/4 cup (2 oz) cream cheese, softened
  • 4 eggs, beaten
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Make this Crustless Quinoa and Kale Quiche and serve up a savory quiche that’s perfect for gluten-free guests, kale fanatics or anyone interested in a delicious dish!

    Step 1

  • Prepare quinoa according to package directions. Preheat oven to 350°F.

    Step 2

  • Coat a 9-inch pie pan with nonstick cooking spray.

    Step 3

  • Combine kale, onions and garlic in a medium, microwave-safe bowl. Cover loosely and microwave on HIGH for 1 minute.

    Step 4

  • Add in quinoa, feta and cream cheese and stir until well combined.

    Step 5

  • Add eggs, salt and pepper and mix well. Pour mixture into prepared pan.

    Step 6

  • Bake for 30 minutes, or until center is set and top is beginning to brown.
