Cranberry Apple Rice Pilaf

Ingredients

  • 1 bag Success® White Rice
  • 1 tbsp salted butter
  • 1/2 cup yellow onion, chopped
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 ground nutmeg (optional)
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup Granny Smith apples, chopped
  • 1/4 cup pecan pieces
  • fresh rosemary, for garnish

Instructions

    Step 1

    Prepare rice according to package directions.

    Step 2

    In a medium saucepan, melt butter over medium heat. Sauté onions for 3 minutes or until softened.

    Step 3

    Remove from the heat and add rice, cinnamon (if using), and nutmeg (if using). Fold in cranberries, apples, and pecans. Garnish with rosemary.
