Ingredients

  • 1 bag Success® Brown Rice
  • 1 tbsp canola oil
  • 1 lb ground turkey
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups salsa
  • 1 can (15 oz) white kidney beans, drained
  • 16 Boston lettuce leaves
  • 1 cup shredded Cheddar cheese
  • 1/2 cup sour cream
  • 1 ripe avocado, peeled, pitted and diced (optional)
  • 1/2 cup fresh cilantro leaves
  • 2 green onions, thinly sliced

Instructions

  • Serve these Chili Rice Lettuce Cups at your next gathering and don’t be surprised when they all disappear. Easy to make and fun to eat, these tasty cups are a winning combination.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in a large, nonstick skillet over high heat. Add turkey and cook, breaking apart with a spoon, for 5 minutes, or until lightly browned.

    Step 3

  • Add onions, garlic, chili powder, salt and pepper. Cook for 5 minutes, or until onion is softened. Pour in salsa and bring to a simmer. Stir in beans and prepared rice. Simmer for 10 minutes, or until slightly reduced.

    Step 4

  • Spoon turkey mixture into lettuce cups. Sprinkle with cheese and dollop with sour cream. Garnish with avocado, if using, cilantro and green onion. Serve immediately.
