Cajun Sausage and Rice Skillet

Ingredients

  • 1 bag Success® White Rice
  • 4 cups chicken broth
  • 14 oz andouille sausage, sliced
  • 1 tbsp canola oil
  • 1/4 celery, diced
  • 1/4 cup green bell pepper, diced
  • 1/4 cup onion, diced
  • 2 tsp Cajun seasoning
  • 1 (15 oz) can fire roasted diced tomatoes, drained
  • 2 tbsp green onion, thinly sliced (optional)

Instructions

  • Simple and satisfying, this complete skillet meal never fails to impress.  

  • Step 1 

    Prepare rice according to package directions, replacing water with chicken broth.  

  • Step 2 

    Heat oil in a deep skillet over medium heat and add sausage – cook for 5 minutes until browned.  

  • Step 3 

    Add celery, bell pepper, onion, and Cajun seasoning and cook for 2 minutes. 

  • Step 4 

    Add tomatoes and cook for an additional 2 minutes. 

  • Step 5 

    Stir in rice. Garnish with green onions, if using.
