Banana Bread Rice Pudding

Ingredients

  • 1 bag Success® White Rice
  • 2 ripe bananas, divided
  • 1 tbsp white sugar
  • 3 cups milk
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup whipped cream

Instructions

  • Step 1: Prepare rice according to package directions. Let cool slightly.

  • Step 2: Slice 1/2 of 1 banana and sprinkle 1 tablespoon sugar over it. Set aside. Mash the remaining banana.

  • Step 3: In a saucepan over medium heat, combine the rice, mashed banana, and milk. Stir well.

  • Step 4: Add the honey, vanilla extract, cinnamon, and salt. Mix to combine.

  • Step 5: Bring the mixture to a gentle simmer, stirring occasionally, and cook for about 10 minutes or until thick and creamy.

  • Step 6: Remove from heat and let cool slightly before serving. Once cooled top with whipped cream.

  • Step 7: Heat a skillet over medium heat; cook and stir sugared banana slices until sugar has melted and caramelized for 2 minutes. Spoon over rice pudding.
