Ingredients

  • 1 bag Success® White Rice
  • 1/2 cup mushrooms, sliced
  • 1/2 cup water chestnuts, chopped
  • 1/4 cup green onion, thinly sliced
  • 1/4 cup pimiento, diced
  • 2 tbsp parsley, chopped
  • 1 tbsp lemon peel, grated
  • 1/8 tsp ground black pepper
  • 1 red snapper (approximately 1lb), cleaned and butterflied
  • non-stick cooking spray
  • 1 tbsp margarine, melted

Instructions

  • Step 1: Preheat oven to 400ºF. Prepare rice according to package directions.

  • Step 2:  Combine rice, mushrooms, water chestnuts, onions, pimento, parsley, lemon peel, and pepper; toss lightly. Fill the cavity of fish with rice mixture; close the cavity with wooden skewers soaked in water.

  • Step 3: Place fish in 13x9x2-inch baking dish coated with cooking spray; brush fish with margarine. Bake fish at 400ºF for 20 minutes or until fish flakes easily with fork.
