Tortilla Rice Soup

This easy Chicken Tortilla Rice soup is made with a blend of chicken, green chilies, lime and white rice stewed in chicken broth and topped with crunchy chips.

Ingredients

  • 1 bag Success® White Rice
  • ⅓ cup green onion, sliced
  • non-stick cooking spray
  • 4 cups chicken broth
  • 1 can (10 oz.) diced tomatoes and green chilies, undrained
  • 1 cup cooked chicken breast cubes
  • 1 can (4 oz.) chopped green chilies
  • 1 tbsp lime juice
  • ½ cup tomato, chopped
  • tortilla chips
  • 4 lime slices, for garnish

Instructions

  • Try this comfort food on for size, Chicken Tortilla Soup loaded with chopped tomatoes, green chilies, chicken breast, and Success® White Rice in a warm broth topped with crunchy tortilla chips and a dash of lime juice.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Sauté onions in a large saucepan coated with cooking spray over medium-high heat until tender. Add broth, cooked rice, tomatoes with green chilies, chicken, and chilies. Reduce heat; cover and simmer 10 minutes. Stir in lime juice and chopped tomatoes.

    Step 3

  • Garnish with tortilla chips and lime slices.

There are many options in the way of crispy tortilla strips. Buy pre-made tortilla strips, crumble tortilla chips on top or make your own. To make your own, use your favorite tortilla variety and cut them into strips. Toss in the oven with a bit of oil and salt for a few minutes until they brown.

Cheese? Although this soup is naturally dairy-free, pile on the shredded cheese of choice, if desired.
