Top it Your Way!

There’s a lot to love about the variety of toppings you can add to this soup! For starters, crunchy tortilla chips add some crunch. Creamy avocado slices add another layer of texture and vitamins. Chop a few leaves of cilantro and add a squeeze of fresh lime juice for even more flavor. For a spicy kick, mix in a small dollop of Sriracha sauce or your favorite spicy salsa. Customize this soup until it’s perfect for you!

There are a few options when it comes to which crispy tortilla chips you use. Buy premade tortilla strips to crumble on this soup or make your own. To make your own, use your favorite type of tortillas and cut them into strips. Toss them in the oven with a bit of oil and salt for a few minutes until they brown.

Although this soup is naturally dairy-free, pile on the shredded cheese of choice, if desired.
