Ingredients

  • 1 bag Success® White Rice
  • 1 tbsp canola oil
  • 1/3 cup thinly sliced green onion
  • 4 cups chicken broth
  • 1 can (10 oz) diced tomatoes and green chilies
  • 1 cup diced, cooked chicken breast
  • 1 can (4 oz) chopped green chilies
  • 1/2 cup chopped tomatoes
  • 1 tbsp lime juice
  • 1 cup tortilla chips, crumbled
  • 4 lime wedges

Instructions

  • This Tortilla Rice Soup, loaded with tomatoes, green chilies, chicken breast and Success® White Rice, is a comfort-food classic. Topped with crunchy tortilla chips and a dash of lime juice, it’s loaded with texture and flavor and is sure to satisfy.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a large saucepan set over medium-high heat. Sauté onions for 2-4 minutes, until tender. Add rice, broth, diced tomatoes with green chilies, chicken and green chilies to saucepan. Reduce heat, cover and simmer for 10 minutes. Stir in chopped tomatoes and lime juice.

    Step 3

  • Serve soup garnished with tortilla chips and lime wedges.
