These lovely Quinoa Pizza Bites are made with our 10-minute quinoa medley and make great snacks, any day of the week. Make a batch, bring them to the office and you’ll have the ultimate afternoon pick me up!
Prepare quinoa according to package directions.
Preheat oven to 350ºF. Coat mini-muffin cups with non-stick cooking spray.
Combine cooked quinoa with all remaining ingredients, mixing thoroughly. Divide mixture evenly among muffin cups.
Bake 20 to 25 minutes or until golden brown. Transfer to a cooling rack. Serve warm with marinara sauce.
This recipe will make up to 18 tasty pizza bites, leaving you to choose whether to portion them throughout the workweek or share with the roomies. Whichever you decide, these little delights are bound to make a monthly, if not, weekly reappearance.
Each mouthful of these unique morsels will be flavor-packed. Thanks to savory mozzarella cheese, minced garlic, chopped pepperoni, and a bit of crushed red pepper flakes – it just isn’t pizza without the crushed red pepper. All of these ingredients get bound together with three large eggs and mixed into a thick batter. After, you divide them into muffin cups and bake them off until their tops are golden brown.
Enjoy them right out of the oven or wait till they’ve cooled down. Serve with hot marinara sauce and you’re good to go! We’ll warn you though, these pizza bites will smell so good coming out of the oven, that waiting will be a challenge.
