These lovely Quinoa Pizza Bites are made with our 10-minute Success® Tri-Color Quinoa and make great snacks, any day of the week. Make a batch, bring them to the office and you’ll have the ultimate afternoon pick-me-up!
Step 1
Prepare quinoa according to package directions.
Step 2
Preheat oven to 350ºF. Coat 18 cups of a 24-cup mini-muffin tin with nonstick cooking spray.
Step 3
Combine cooked quinoa with bread crumbs, cheese, pepperoni, eggs, garlic, Italian seasoning and red pepper flakes, if using, in a large bowl. Stir to combine well. Divide mixture evenly among prepared muffin cups.
Step 4
Bake for 20 to 25 minutes, or until golden brown. Transfer to a cooling rack. Serve warm with marinara sauce.
