Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • 1 cup riced cauliflower
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup (2 oz) egg whites
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • nonstick cooking spray
  • 1/2 cup pizza sauce
  • 1 cup shredded pizza blend cheese
  • pizza toppings

Instructions

    Step 1

  • Prepare quinoa according to package directions. Preheat oven to 425°F.

    Step 2

  • Place quinoa, riced cauliflower, Parmesan cheese, egg whites, garlic and salt in the bowl of a food processor.

    Step 3

  • Pulse several times until all ingredients are well blended and start to stick together.

    Step 4

  • Line a 12-inch pizza pan with parchment paper and spray with nonstick cooking spray.

    Step 5

  • Press mixture into prepared pizza pan. Bake for 25 minutes, or until crust is golden brown.

    Step 6

  • Top with sauce, pizza blend cheese and pizza toppings and bake for an additional 10 minutes.

Besides these simple ingredients, this recipe requires a few pieces of cookware. Be sure you have a 12-inch pizza pan and some parchment paper on hand before starting this recipe.

Once you’ve got everything assembled, this gluten-free pizza recipe comes together in less than an hour. After blending the ingredients, pop the crust in the oven for 25 minutes. Once it’s golden brown, it’s ready to top with your favorite type of sauce and additional toppings. After that, let it bake for another 10 minutes and it’s done!

Cauliflower Rice 101

There are two popular ways to make riced cauliflower. One way is to use a box grater to grate the cauliflower into small pieces. The second option is to use a food processor with the grater attachment and to simply feed the cauliflower into the food processor a quarter piece at a time.

Once your cauliflower is grated, you want to remove as much water from the cauliflower as possible. For this, we recommend you transfer the riced cauliflower to a large paper towel and squeeze to remove any excess moisture.

Cauliflower rice is best cooked right away. If cooked, it keeps for up to 4 days in the fridge.
