Ingredients

  • 2 bags Success® Jasmine Rice
  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 packet (1 oz) taco seasoning
  • 1 can (11 oz) whole kernel corn with red and green bell peppers, drained
  • 1 cup Mexican blend cheese, shredded
  • 1/4 cup sour cream
  • 1 avocado, sliced
  • Fresh cilantro (for garnish)

Instructions

  • Step 1 

    Prepare rice according to package directions. 

    Step 2 

    In a large skillet over medium-high heat, add the ground beef. Cook for 5 minutes until browned, breaking it apart with a spatula. Drain excess fat, if necessary. 

    Step 3 

    Stir in the black beans, tomatoes, taco seasoning, and corn. Mix well to combine. 

    Step 4 

    Add rice to the skillet and stir until everything is well mixed. Cook for an additional 2 minutes until heated through. 

    Step 5 

    Add cheese over the top of the mixture. Cover the skillet with aluminum foil and let it sit for a few minutes until the cheese is melted. 

    Step 6 

    Top with sour cream, avocado, and cilantro.
