Step 1
Prepare rice according to package directions. Set aside and keep warm.
Step 2
Heat oil in a large skillet over medium-high heat. Add chicken and sauté for 6 minutes, turning once.

Combine orange juice and pineapple juice in a large bowl. In a small bowl, whisk together cornstarch and 1 tablespoon of juice mixture until smooth. Set aside.
Step 4
Add brown sugar, soy sauce, apple cider vinegar, ketchup, ginger, garlic and red pepper flakes to remaining juice mixture. Pour sauce over chicken in skillet and bring mixture to a boil. Cover, reduce heat and simmer for 35 minutes, turning chicken after 20 minutes.
Step 5
Uncover the chicken and stir in cornstarch mixture. Cook, stirring constantly, for 5 minutes, or until the sauce thickens.
Step 6
Spoon rice onto a serving platter. Top with chicken and sauce. Garnish with green onions.
