  • 8 boneless, skinless chicken thighs
  • 1/2 cup orange juice
  • 1/2 cup pineapple juice
  • 1 tbsp cornstarch
  • 1/3 cup packed light brown sugar
  • 1/3 cup soy sauce
  • 3 tbsp apple cider vinegar
  • 3 tbsp ketchup
  • 2 tbsp minced fresh ginger root
  • 2 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes
  • 1/2 cup chopped green onion

    Step 1

  • Prepare rice according to package directions. Set aside and keep warm.

    Step 2

  • Heat oil in a large skillet over medium-high heat. Add chicken and sauté for 6 minutes, turning once.

    Step 3

  • Combine orange juice and pineapple juice in a large bowl. In a small bowl, whisk together cornstarch and 1 tablespoon of juice mixture until smooth. Set aside.

    Step 4

  • Add brown sugar, soy sauce, apple cider vinegar, ketchup, ginger, garlic and red pepper flakes to remaining juice mixture. Pour sauce over chicken in skillet and bring mixture to a boil. Cover, reduce heat and simmer for 35 minutes, turning chicken after 20 minutes.

  • Uncover the chicken and stir in cornstarch mixture. Cook, stirring constantly, for 5 minutes, or until the sauce thickens.

  • Spoon rice onto a serving platter. Top with chicken and sauce. Garnish with green onions.
