Ingredients

  • 1 bag Success® Basmati Rice
  • 1 medium orange
  • 2 tbsp butter
  • 2 medium carrots, diced
  • 1/4 cup dried cranberries
  • 1/4 cup golden raisins
  • 2 tsp curry powder
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chicken broth
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup pistachios, toasted and chopped finely

Instructions

  • Our Jeweled Rice is based on a traditional Iranian dish that’s fragrant, bursting with flavors and beautiful to look at. Made with our long-grain Success® Basmati Rice, it’s also easy to prepare. With a rich mixture of ingredients, including carrots, cranberries, pistachios, orange, golden raisins and curry, this dish is unlike any other.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Zest orange and reserve zest. Slice orange into segments, reserve.

    Step 3

  • Melt butter in a in a heavy-bottomed sauté pan over medium-low heat. Add carrots, cranberries, golden raisins, curry powder, sugar, salt and pepper and cook, stirring, for about 2 minutes.

    Step 4

  • Add chicken broth and orange zest and turn heat up to high, stirring often until liquid has been absorbed.

    Step 5

  • Add cooked rice to pan and stir well to combine. Fold in almonds and pistachios and taste for seasoning, adding additional salt and pepper, if desired.

    Step 6

  • Serve warm, garnished with orange segments.

  • To make this dish vegetarian, simply swap out the chicken broth for your favorite vegetable variety.
