Jalapeño Peach Chicken

Ingredients

  • 1 bag Success® Jasmine Rice
  • 4 boneless, skinless chicken breasts
  • 1/2 tbsp salt
  • 1/2 tbsp pepper
  • 1 tbsp olive oil
  • 2 fresh peaches, sliced
  • 1 jalapeño, thinly sliced (remove seeds for less heat)
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1/4 cup chicken broth
  • 1/4 cilantro, chopped (optional)

Instructions

  • Chicken night starting to feel like a bore? Spice things up with this quick and satisfying weeknight-friendly meal. 

    Step 1

    Prepare rice according to package directions.

    Step 2

    Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3 minutes per side or until golden brown. Remove and set aside.

    Step 3

    In the same skillet, add peaches and jalapeños. Sauté for 3 minutes until slightly softened. Stir in honey, apple cider vinegar, and broth. Bring to a simmer.

    Step 4

    Return chicken to the skillet. Spoon sauce over the top, reduce heat, cover, and cook for 8 minutes, or until the chicken is cooked through and the sauce has thickened. 

    Step 5

    Serve chicken over the rice. Drizzle with extra sauce. Sprinkle cilantro on top, if using.
