Prepare rice according to package directions.

Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3 minutes per side or until golden brown. Remove and set aside.

In the same skillet, add peaches and jalapeños. Sauté for 3 minutes until slightly softened. Stir in honey, apple cider vinegar, and broth. Bring to a simmer.

Return chicken to the skillet. Spoon sauce over the top, reduce heat, cover, and cook for 8 minutes, or until the chicken is cooked through and the sauce has thickened.
